Food labels are partly a regulatory requirement and partly a marketing tool. You only need five numbers — always per 100g, not per serving. The ingredients list tells you what the product actually is. The front of the pack tells you what the brand wants you to think.
Pick up any packaged food. You'll find a nutrition panel with twelve or more numbers, an ingredients list with thirty items, and a front-of-pack full of claims designed to make you feel good about buying it.
None of this is accidental. Food labels are partly a regulatory requirement and partly a marketing tool — and the two functions are in constant tension. The regulatory part is designed to inform you. The marketing part is designed to sell to you.
This lesson teaches you to read the part that informs and ignore the part that sells. You'll be able to scan any food label in under 60 seconds and make a confident decision. No nutrition degree required.
The Anatomy of a Food Label
A standard food label has four distinct zones. Understanding what each one does — and what it's trying to do — is the foundation of reading them clearly:

The Five Numbers That Actually Matter
A nutrition panel typically shows 10–15 figures. Five of them are worth your attention for most purchasing decisions. Notice what's missing: calories. A 200-calorie serving of Greek yoghurt and a 200-calorie biscuit are not equivalent choices — and the calorie figure doesn't tell you that.

Reading the Ingredients List
The ingredients list is where the real information lives. Ingredients are listed by weight, from highest to lowest. The product is, in essence, the first three to five ingredients. Here's what to look for:
- Short lists with recognisable names. A product with five ingredients you can identify is almost always preferable to one with twenty-five — a reliable heuristic for packaged convenience foods.
- Where sugar appears. If any form of sugar, syrup, or sweetener is in the first three ingredients, the product is primarily sweetener — regardless of what the front of pack claims.
- Multiple sugar names. Sugar has dozens of names. Spotting several in a single list signals that the manufacturer is distributing sugar across multiple entries to prevent any single one from appearing in the top three.
- The fat type. "Vegetable oil" is vague and usually fine. "Partially hydrogenated vegetable oil" contains trans fats — avoid entirely. "Palm oil" is nutritionally neutral but carries significant environmental concerns.
If you see three or more of these in a single ingredient list, the product's sugar load is being deliberately fragmented to avoid prominence.
The 60-Second Label Scan
Here is the exact sequence for reading any label in under a minute. Practise it ten times and it becomes automatic:

Front-of-Pack Claims: A Decoder
Front-of-pack marketing language is designed to short-circuit your label-reading. Here's what the most common claims actually mean:

| "Wholegrain" | Contains some wholegrain, but may not be predominantly wholegrain. Wholegrain flour should appear first in the ingredients list. |
| "Fortified with vitamins" | Vitamins were added back after processing stripped them, or added to justify a health association. Not inherently bad — but signals processing. |
| "Organic" | Produced without synthetic pesticides (a regulated claim). Does not mean low sugar, low calorie, or nutritionally superior. |
| "Gluten-free" | No gluten-bearing grains. Medically necessary for coeliac disease. Not a health benefit for people without gluten sensitivity. |

Use this when scanning labels in the supermarket — green means proceed, amber means be aware, red means read more carefully before buying:

- For each product, note: What is the sugar per 100g? What are the first three ingredients? Is the serving size realistic?
